Sweet and Spicy Pork Dinner...Healthy, Inexpensive and Something Different

This is what we are having for dinner!! I am substituting pork for chicken. My sides will be wild grain rice, cut green beans and toasted bread. Believe it or not, I got ALL items on sale and with coupons (one of the benefits of stockpile shopping) bringing this meal just under $10.

Sweet & Spicy Picante Chicken (Pork)

Prep: 15 minutes
Bake: 20 minutes
Serves: 4

4 skinless, boneless chicken breast halves (about 1 pound)
1 1/2 cups Pace® Picante Sauce
3 tablespoons packed light brown sugar
1 tablespoon Dijon-style mustard
3 cups hot cooked regular long-grain white rice
Heat the oven to 400°F. Place the chicken into a 2-quart shallow baking dish. Stir the picante sauce, brown sugar and mustard in a small bowl. Pour the picante sauce mixture over the chicken.

Bake for 20 minutes or until the chicken is cooked through. Serve with the rice.

Serving Suggestion: Serve with steamed cut green beans. For dessert serve lemon sorbet.
